The boy who cried 'FINISHED'!!!!

Jim and I FINALLY finished the Family Profile last night.
I know I’ve been talking about it a lot lately, but it’s been kind of taking up all our time – so, there you have it.

We went through the entire thing last night, taking turns reading our answers aloud and it took us just about four hours to get through all 63 pages.
I’m glad we took our time and did it though.
Not only did it help from a grammar, paper-writing, perspective, but over the course of the four hours, we laughed, cried, and laughed a lot more.
Between the two of us we’ve certainly had our ups and downs and it was very comforting to be able to look back on all that we’ve accomplished as well as everything we've been through together.
Anyway, it’s completed and has been turned in.
Phew!

As you all know, we’ve been doing ‘The Biggest Loser’ on Wii, and it’s been not only fun, but quite challenging. One of the options in the game is a bunch of recipes that are taken directly from ‘The Biggest Loser’ cookbook. Well, Jim made one of the recipes last night and they were RIDICULOUSLY good.
You all need to make them…….now. They are a little bit of heaven….but frozen.

Chocolate–Peanut Butter Grahamwiches

4 whole chocolate graham cracker sheets
4 tsp. reduced-fat peanut butter
1/2 cup frozen fat-free whipped topping , thawed

Break each graham cracker in half (so each half is 1 square). Spread 1 teaspoon of peanut butter evenly over the inside of each of 4 halves. Spread 2 tablespoons whipped topping each evenly among the insides of the 4 remaining halves. Sandwich the crackers together to form 4 sandwiches, each with a layer of peanut butter and a layer of whipped topping. Transfer to an airtight plastic container and place in freezer. Freeze for about 2 hours or up to 1 month. Serve frozen.

I'm still dying to get the Wii thingy, but Greg is a tough sell. Can you make a little video of you guys doing it (the Wii, not the big 'it') and post it. It will be fun to see and may make Greg a believer.
